Marble Cake

The idea of beautifying two different colors of batter into a cake originated in Germany in the 19th century. Before the Civil War, German immigrants with marble cake recipes went to the United States together.
The original idea of the cake was to make a marble pattern with molasses and spices. One of the earliest recorded marble cake recipes appeared in the American recipe published in 1889, which replaced the traditional molasses and spice batter with chocolate in a marble cake. This reflects a new American obsession with chocolate.
According to Gil Marks, author of the Jewish food encyclopedia: “From the 1950s to the 1970s, many Jewish bakeries in the New York area cleverly added a small amount of almond extract to the chocolate marble cake to create a type of German marble cake. Version with aroma of characteristic almonds."
