The Lamington is a scrumptious dessert staple of Australian culinary culture – and history.
Traditionally,
Lamington is a small and pure sponge cake, soaked in melted chocolate sauce,
and then rolling in the dry coconut. This is an iconic Australian cuisine.
Local people often like to eat a few pieces of Lamington when they drink tea or
drink coffee.
It’s origins are
attributed to Lord Lamington. The story goes that one of Lord Lamington's kitchen
maids accidentally dropped his favourite sponge cake into some melted
chocolate. And being a thrifty fellow, rather than throw the cake away, he
suggested that they roll it in dried coconut to protect the fingers.
